Vegan Low FODMAP Sweet Potato Pasta Bake

Pasta bakes have become essential for me while trying to maintain a low FODMAP diet. They're completely customizable, easy to make, really delicious, and great for a group of people or to utilize as meal prep. In this post I'm going to share with you my favorite pasta bake with a delicious sweet potato tomato sauce.


 

It's ugly but delicious, I promise!

Sweet Potato Tomato Pasta Bake



Ingredients:

  • 9-11oz or 235-250g Brown Rice Pasta

  • 1 sweet potato

  • 7.5oz or 212.5g of canned tomato sauce

  • baby spinach (add desired amount-remember it shrinks!)

  • vegan mozzarella cheese (I like Follow your Heart and Violife shredded mozzarella)

  • fresh basil, dried oregano, dried thyme, dried Italian herbs, salt, pepper, and garlic infused olive oil (I ran out of the garlic infused olive oil which is why there's none in my video but add just a small amount for a little garlic taste)


Recipe:

  • boil brown rice pasta according to bag instructions (undercook slightly as it will cook more when baked), rinse with cold water and set aside until sauce is ready

  • cut sweet potato into 2 inch cubes, and boil for 20 minutes or until soft enough to stick fork all the way through sweet potato

  • once boiled, add sweet potato to food processor with 7.5oz (about half a traditional can) of tomato sauce.

  • add desired amount of basil, oregano, thyme, Italian herbs, salt, pepper, and garlic infused olive oil (I probably use about 5-10 small basil leaves, for the rest of the herbs I just sprinkle them until it looks right)

  • pulse until the sauce is slightly thick but smooth





  • add half of your brown rice pasta to the bottom of the dish

  • layer some of the sauce on top and make sure all the pasta is covered

  • sprinkle desired amount of mozzarella on top of the pasta and sauce

  • layer on spinach, I use a lot because it shrinks like crazy!

  • then add the rest of your pasta with more sauce and mozzarella to top it off




  • preheat oven to 400 degrees Fahrenheit and bake for 25-35 minutes and broil on 300 degrees fahrenheit for 3-4 minutes (broiling is optional, if ur cheese has already melted or you don't like crispy pasta on top skip this step)

* This dish reheats great throughout the week in the microwave if you use it for meal prep
